Olive oil is protected in both dark glass bottles and tin cans. Unlike cans, however, dark glass is not impermeable to light. Over time light causes changes in the composition of the oil. Light also speeds up the natural degradation process. Both are great options, just remember to store in a cool, dark space.

Harvest is complete and it is time to make room for grapes! If you do not already know, the Prestifilippo Family acquired property on Rancho California Road earlier this year. With exciting plans for a vineyard (and much more), we must move some of these olive trees!
